I really miss the Maximize button from Windows, which allows me to quickly make a window take up the entire screen. In OS X, I can close a window, minimize a window to the Dock, or make it bigger -- but not full-screen big.
Some apps (like Safari and Mail) do have a full screen mode. I like it a lot. Here's a screen shot from Safari running in full screen mode.
I love how it gets rid of most of the menu bars, toolbars, etc., allowing it to give a ton of screen real estate to the content in the browser. But unlike full-screen "Modern UI" apps in Windows 8 or full-screen mode in IE, all I have to do to get the menu bars back in move the mouse cursor to the top of the screen, and they "fly" out. Then roll back up when I move my mouse cursor back down. Very elegant.
All that said, I was reading a review of the latest version of OS X (Mountain Lion) and was surprised to learn that this is a new feature! Gosh, previous versions of OS X (without this feature) would've driven me nuts.
