iPad absolutely wins in this area. Literally, I do not think I've rebooted it since I got it nearly two months ago, and I've never had a problem with an app crashing.
I have had the Surface RT for about a month less. I -- or, actually, my kids -- managed to bluescreen it within an hour or two of using it, through the Camera app. (In fairness, when I went into the store for the first time, I saw there was an update for the Camera app, so that particular issue may have been fixed already.) I have bluescreened it at least once more since then, and I've crashed a couple of apps. The Windows Store particularly likes to crash when I search it from the charm bar. I've also had to reboot a couple of times for various reasons (unresponsive, security update install, etc.). And sometimes my network connection just dies.
Still, it's not that the Surface RT is unstable. I would say it's very stable. The iPad is just rock solid.
